Our Beginning

It all started with Dr. Lawrence Gordon, an accomplished ear, nose, and throat surgeon whose lifelong fascination with the healing power of mushrooms led him from the operating room to the forest floor.

Blending medical expertise with a love for woodworking, Dr. Gordon began cultivating log-grown mushrooms on fallen oak trees, transforming what might have been firewood into living ecosystems of nutrition and wellness.

The Family Legacy

From the start, this journey was about more than food — it was about creating a sustainable, family-driven enterprise that would stand the test of time.

Today, the vision continues with his son, Elon Gordon, who brings fresh ideas, an entrepreneurial spirit, and a deep respect for nature. Together, father and son are shaping Shinto Shrooms into a multi-generational brand rooted in tradition yet driven by innovation.

Our Farm

Founded in 2022 on the grounds of a circa 1890 dairy farm in the Hudson Valley, our home is as rich in history as it is in soil.

The property features a hand-hewn red barn, lush woodlands, and our unique laying yard built along the historic Erie Railroad track — now embraced by forest wetlands that create the ideal climate for mushroom growth.

What We Grow

While shiitake mushrooms remain at the heart of our story, our farm now produces a full range of specialty and gourmet mushrooms:

  • Shiitake – Rich, earthy flavor and meaty texture.
  • Oyster (Pink, Blue, Golden, Pearl) – Delicate, colorful, and versatile.
  • Lion’s Mane – Meaty, seafood-like texture with brain-boosting benefits.
  • Maitake – Earthy, aromatic clusters loved by chefs.
  • King Trumpet – Firm and hearty, perfect for grilling.
  • Beech – Nutty and subtly sweet.
  • Cremini & Portabella – Classic, robust flavor for any dish.
